Pumpkin Sunflower Nut Butter
I’m gonna be straight up honest with you right now. I don’t like making my own nut butter. I just don’t. I like buying it from the Farmer’s Market or Trader Joes. Yes, I do have a recipe for Chocolate Peanut Butter – don’t judge me.
Maybe it’s because I already make so many other things: yogurt, kefir, sourdough bread, or even butter. I just make so many things, I feel okay with taking an out on nut butter. Crock Pot Country Redneck Chicken Paella

Summer Stir Fry
I love summer…and I love fresh veggies. I love being able to buy new things at the Farmer’s Market – and I love knowing that I can go to my fridge and pull out any assortment of veggies that are fresh. Yummmmmmmmmmmmmm. There is something so refreshing about fresh produce. Don’t you agree? If you don’t, then don’t read this post. It’s about fresh veggies.
In the summer, I like light meals…and I like heavy meals in the winter. Probably because I hate heating up the house and the oven tends to do that. Crock Pot Sweet Apple Chutney
When I was pregnant with Annie, I went hog wild and pig crazy over apples. I ate them every day. Yes, plural. Sometimes three a day. I couldn’t get enough. Now, apples and applesauce are one of her favorite foods. With Andy, it was bananas. I would have attacked you over eating my banana – and he LOVES them now too. It’s a good thing I didn’t gorge myself on Skittles and Doritos.
I still love apple dishes. If I come across a recipe with “apple” in the title, I’m always gonna read it. As much as I love them, I don’t care for traditional apple chutney. It usually includes chopped onion and vinegar. I’m sorry, but I just cannot do that with my apples. It seems wrong to me – like I’m cheating on caramel or something. [Read more…]

Crock Pot Lentil Burrito Bowls
Y’all have requested more lentil recipes…and I can understand why. Lentils are just stinkin’ delicious…pun intended? Ha, ha! Beans, beans, the magical fruit! The more you eat the more you…uh, yeah. I digress.

Crock Pot Sugar-Free Strawberry Chia Jam
I love jam…namely my Mama’s Strawberry Freezer Jam. I could literally suck that stuff up with a straw. But man alive – as good as it is, it’s chock full of sugar. Most jams are.
