Crock Pot Southwest Chicken and Rice Chowder
The first time I ate Southwest Chicken Chowder, I’m pretty sure I cried because it was so wonderful.
I’m not usually this dramatic about my dinner, but at the time, I was three days post-partum with my second son, exhausted, weepy, and starving. And this yummy chowder was a gift from my friend, Kate, who knows that bringing dinner to a new mom is about #3 on the list of “Nicest Things You Can Do for Anyone.”
I have made this many times since then. I don’t always shed tears of joy eating it, but almost. I love that this dish is yummy and allergy-friendly, as we manage multiple food allergies. Almond Flour Brownies
I’ve never met a brownie I didn’t like. Wait. Scratch that. I have met brownies I didn’t like…dry ones. Ashes to ashes, dust to dust brownies. No thanks…but gooey brownies. Yeah, buddy. Come to Mama!

Easy Crock Pot Vegetables
This isn’t one of those crock pot recipes that you use because you need to leave the house for the day and want dinner ready when you get home. This is one of those “it’s too hot to turn on the oven today but I still want yummy vegetables with my steak” kind of recipes.

Parmesan Squash Noodles
Spaghetti pretty much rocks my dinner table – we all love it. It would be sad, sad world without it.
We’ve just started using alternative noodles occasionally. We really love spaghetti squash, and on Thursday I’ll show you how I fix them. It’s fun and crazy stuff around this joint. Added to our “love list” now are these delicious squash noodles. Do they taste like spaghetti? No – it’s a squash, not a miracle. Are they good with pasta sauce? YES. I think I even like them better – they don’t stick and clump together.
Homemade Freezer Smoothies
Y’all know that I like to save a buck here and there. Some call me cheap. I call me frugal. Okay, so sometimes I call myself cheap too. But the first time I made these freezer smoothies, I was just tickled pink with myself. Making them at home is SO EASY!
If you use fruit that’s in season and homemade yogurt or yogurt you found on sale, this is a very cost effective breakfast/snack. Who needs to buy a pre-made bag of smoothie when these are so quick and easy? Not me, says I.
Plus, I know what’s in it….no weird ingredients or food colorings added. I still have no idea why the food industry feels like they need to put food coloring in everything. But before I get on a soap-box, maybe I should direct my thoughts elsewhere. You’re welcome. [Read more…]
Crock Pot Candied Nuts
Once upon a time there was a mom. She was trying to make a tasty treat in the oven. Everything was going fine…but then the baby had a poop – and it got EVERYWHERE. While cleaning up the poop (which she’s not afraid of), someone also came to the door. That mom chatted with the company for a while. Company left – then the 3 year old had a meltdown. Mama dealt with that too – and all was going fine…and then, the smoke.

When I first get over my initial shock of wondering why on EARTH would someone not want to use their crock pot (y’all are weird, but I love ya. I’m really enjoying this series of cooking through my stash – and I’m also enjoying incorporating my eBooks into it as well. This week I’m making Chocomole for you guys – and it’s a recipe directly from my friend Katie over at Kitchen Stewardship. Katie’s recipes are always delicious. I’ve already told you I love her granola bars and her White Bean Pasta…now you can add Chocomole to the list, from the cookbook Healthy Snacks To Go 2nd Edition.
What is Chocomole? It’s pudding made from AVOCADOS! I’m sure you’ve seen it all over Pinterest. I’ve tried a few recipes, but this is HANDS DOWN the best one EVAH! See, all those caps mean that I really mean it. I don’t lie.
